Main Ingredients
- Pigeon Meat (鸽子 / Pigeon) – 1 whole pigeon
- Winter Bamboo Shoots (冬笋 / Winter Bamboo Shoots) – 25 g
- Fresh Mushrooms (鲜蘑 / Fresh Mushrooms) – 25 g
- Ham (火腿肉 / Ham) – 20 g
- Chicken Stock (鸡汤 / Chicken Stock) – 1000 ml
Seasonings
- Salt (盐 / Salt) – to taste
- Sugar (糖 / Sugar) – to taste
- Cooking Wine (料酒 / Cooking Wine) – to taste
- Spring Onion (大葱 / Spring Onion) – to taste
- Ginger (生姜 / Ginger) – to taste
Cooking Method
- Cut the pigeon into four pieces.
- Lightly crush the ginger.
- Slice the fresh mushrooms and winter bamboo shoots, blanch them in boiling water, and drain well.
- Bring water to a boil, add the pigeon pieces, blanch briefly, and remove.
- Pour the chicken stock into a clay pot and bring to a boil. Add the pigeon meat, spring onion, ginger, cooking wine, salt, sugar, and optional MSG.
- Reduce to low heat and simmer until the pigeon is about 70–80% cooked.
- Add the winter bamboo shoots, fresh mushrooms, and ham, then continue simmering until the meat becomes tender.
- Remove the spring onion and ginger, skim off any floating fat, and serve.
