Bamboo Shoot Mushroom & Ham Pigeon Nourishing Soup

This nourishing soup is made with pigeon meat, bamboo shoots, mushrooms, and ham. It is rich in nutrients and provides many health benefits. Pigeon meat contains abundant calcium, iron, copper, vitamin A, B vitamins, and vitamin E. It is also rich in lecithin and pantothenic acid, which help prevent hair loss and arteriosclerosis. This soup is especially beneficial for improving anemia.

Main Ingredients

  • Pigeon Meat ( / Pigeon) – 1 whole pigeon
  • Winter Bamboo Shoots ( / Winter Bamboo Shoots) – 25 g
  • Fresh Mushrooms (鲜蘑 / Fresh Mushrooms) – 25 g
  • Ham (火腿肉 / Ham) – 20 g
  • Chicken Stock (鸡汤 / Chicken Stock) – 1000 ml

 

Seasonings

  • Salt ( / Salt) – to taste
  • Sugar ( / Sugar) – to taste
  • Cooking Wine (料酒 / Cooking Wine) – to taste
  • Spring Onion (大葱 / Spring Onion) – to taste
  • Ginger (生姜 / Ginger) – to taste

 

Cooking Method

  1. Cut the pigeon into four pieces.
  2. Lightly crush the ginger.
  3. Slice the fresh mushrooms and winter bamboo shoots, blanch them in boiling water, and drain well.
  4. Bring water to a boil, add the pigeon pieces, blanch briefly, and remove.
  5. Pour the chicken stock into a clay pot and bring to a boil. Add the pigeon meat, spring onion, ginger, cooking wine, salt, sugar, and optional MSG.
  6. Reduce to low heat and simmer until the pigeon is about 70–80% cooked.
  7. Add the winter bamboo shoots, fresh mushrooms, and ham, then continue simmering until the meat becomes tender.
  8. Remove the spring onion and ginger, skim off any floating fat, and serve.
