The Tufuling Old Turtle Soup is a traditional Cantonese medicinal cuisine known for its strong detoxifying effects, its ability to nourish Yin, clear internal heat, and strengthen the spleen and kidneys.
 

The main ingredients are Tufuling (Smilacis Glabrae Rhizome), grass turtle, and lean pork.

Ingredients

  • Tufuling (Smilacis Glabrae Rhizome) 土茯苓 – 15 g
  • Grass Turtle – 1 whole
  • Red Dates 红枣 – 10 g
  • Lean Pork 瘦肉 – 50 g
  • Ginger 生姜 – 10 g

 

Seasonings

  • Clear Soup Stock 清汤 – appropriate amount
  • Salt – 4 g
  • Shaoxing Wine – 3 g
  • Pepper Powder 胡椒粉 – a pinch

 

Cooking Instructions

1️ Preparation

  • Slice the Tufuling into thin pieces.
  • Clean the grass turtle thoroughly and cut it into large chunks.
  • Cut the lean pork into smaller pieces.
  • Peel and slice the ginger.

2️ Blanching

  • Bring water to a boil in a pot.
  • Add the turtle pieces and lean pork, boil for about 5 minutes to remove blood and impurities.
  • Discard the water and rinse the ingredients.

3️ Cooking

  • Place Tufuling, turtle, red dates, lean pork, and ginger into a ceramic pot.
  • Add clear broth, Shaoxing wine, and pepper.
  • Cover and simmer over low heat for 3 hours.

4️ Final Step

  • Season with salt and simmer for an additional 20 minutes before serving.
