During cooking, whole pieces of ginger and scallion are stewed together with the chicken to retain the natural aroma of the ingredients. Cooking Instructions
- Wash the heart of the Chinese cabbage and cut it into pieces. Clean the old hen, blanch it in boiling water, then rinse thoroughly.
- Clarify the original chicken broth, strain through a fine sieve, and return it to a stainless-steel pot. Bring to a boil, add the chicken, whole ginger, and whole spring onion. Once it reaches a boil again, reduce to low heat and simmer until the chicken becomes tender.
Then add the cabbage, salt, cooking wine, pepper, MSG, etc. Remove the ginger and spring onion. Adjust seasoning and serve the soup in a large bowl.
